So sorry i have been so slack lately! Things are just so busy with school and such, I barely even have time to bake! I made this vegan quinoa salad a couple weeks ago and I really like it! Its very light and flavorful. It makes for a perfect lunch!!
1 ½ cup of quinoa
2 cups water
1 avocado, chopped
1 cup tomatoes, chopped
1 cup corn, (canned is easy)
1 teaspoon of cumin/chili powder
½ cup lime juice
1 teaspoon minced garlic
4 tablespoons olive oil
Sprinkle of salt
Cook quinoa in rice cooker or on stove, with 2 cups of water. Once cooked let cool. Mix the spices, limejuice, olive oil and garlic. Add dressing and veggies to quinoa and stir well. Enjoy!
